#1 Colorful Noodles

Noodles start out pretty bland. But we're going to change all of that.

#2 First, cook linguine or spaghetti noodles al dente according to package instructions.

While the pasta is cooking, get the food coloring ready. You can use whatever colors you want, but here we used red, orange, yellow, green, blue and purple. Add about 20 drops of each food coloring and 2 tablespoons water to Ziplock bags.

When the pasta is done, drain it in a strainer and immediately run cold water over it to halt the cooking.

Transfer the pasta, portioning it as you go, into the bags of food coloring. Seal the bags, and mix the pasta and food coloring until well-combined. Let each bag sit for at least a minute.

Then one by one, return each batch of colored noodles to your strainer, give it a second cold-water rinse, and transfer it back to your pot. When all of the colors of pasta have been rinsed and are back in the pot, toss the noodles together until you have a colorful mix.

Serve with your favorite pasta toppings -- or with our Parmesan-crisp clouds (see below for instructions).

#6 Parmesan Crisps

Parmesan crisps make the perfect companion to Rainbow Pasta because they look like little clouds! Here's how to make them:

Preheat your oven to 350 degrees. Cover a baking sheet with a Silpat mat or sheet of parchment paper, and place about 2 tablespoons shredded Parmesan cheese in an even circle. (A cookie cutter makes this easy, as shown.)

Then bake for 4-5 minutes until the cheese is melted and the edges just begin to brown. Remove from parchment paper and allow to cool before serving. (These can be made ahead of the pasta.)
