While a lot of people in the Youtube comments are shouting ‘FAKE! EDITED!', someone on Reddit has explained that yes, it is indeed real, and there's no video editing or magic involved.

#3 It’s a bit like ‘the dress’, but in cake form. Plus everyone’s a winner, this time, because it really is ALL the colours you see.

It appears to have been created with some extremely detailed icing work, applied through an airbrush. Charlotte sprayed each side of the individual icing ridges a different colour, so how the cake appears depends on the angle you view it from.
