What's a Poke Cake?

What's a Poke Cake? It is a cake which had holes poked in it and then the holes are filled with pudding,caramel,sweetened condensed milk or sometimes even jello! It just depends what kind of Poke Cake you are making!

Recipe

INGREDIENTS

CAKE:

1 box Carrot Cake Mix

1 package Instant Vanilla Pudding

4 Eggs

½ c Milk

1 c Sour Cream

¾ c Vegetable Oil

1½ c Chopped Pecans (walnuts will work also--or you can omit the nuts)

14 oz. can of Sweetened Condensed Milk

Frosting:

2 tubs of Cool Whip

Topping:

Caramel Sauce

½ cup Chopped Pecans or walnuts

INSTRUCTIONS

Preheat 350 degrees

Combine cake ingredients except for Sweetened Condensed Milk and mix until combined.

Grease a 9 x 13 inch pan and pour mixture in

Bake 40-45 minutes

Let cake cool completely, but do not remove cake from pan.

Once cake has cooled,evenly poke the cake. Make sure when you poke it the poker is hitting the bottom of the pan. This ensures that all the caramel will be distributed beautifully! Don't be stingy with the holes...POKE that cake!

Pour sweetened condensed milk over the cake and let set for 2-3 hours.

Once cake has set,evenly spread Cool Whip over the cake.

Heat opened jar of Caramel Sauce in the microwave for 20 seconds.

Pour Caramel Sauce over the frosting and top it with chopped pecans or walnuts.
